If you know anything about SAGE, you know that our organic garden at Pine Crest School in Boca Raton, FL, is a thing of beauty and something of which we are immensely proud. Don Janezic, SAGE's Food Service Director at Pine Crest, lavishes attention on the soil, the plants and the compost that enriches them.
The garden -- which recently won third place in its category in the Florida School Garden Competition -- isn't just a source of wonderful fruits and vegetables for the school community to enjoy. Chef Don uses it as an outdoor classroom, inviting the children to plant seeds, observe insect life and help harvest the ripe produce. Inside the dining hall, the youngsters can't wait to taste the zucchini, peppers, tomatoes and other goodies they had a hand in growing.
Chef Don even takes the lessons directly into the classroom, to show students how ladybugs prey on pesky aphids, or how butterfly larvae mature into colorful winged creatures.
